A delicious beef chili recipe using top-quality Castaneda ground beef for maximum flavor. The combination of vegetables and spices creates a chili that is irresistibly inviting, with the characteristic flavors and aromas of smoke, spice, and warmth. Allow the chili to simmer for at least an hour as richness and body are slowly extracted into the dish. Then dish up the beef chili alongside your preferred rice or serve in a taco, garnished with thinly sliced red onion, avocado, and shredded cilantro.
Tips:
- Ensure the Castaneda ground beef is defrosted before use by leaving in the refrigerator overnight to thaw.
- If time allows then simmer the beef chili for up to 3 hours, the flavor will only improve!
Castañeda Beef
Ingredients
2 lbs Castaneda Beef Ground Beef
6 slices thick-cut bacon, chopped
½ white onion, roughly chopped
4 cloves garlic, finely chopped
2 jalapenos, finely chopped
3 carrots, roughly chopped
2 tbsp ground cumin
2 tbsp chili powder
1 tbsp oregano
½ tsp cinnamon powder
2 ½ tsp salt (to taste)
3 tbsp tomato paste
28 oz canned crushed tomatoes
2 cups beef broth
2 cups pinto beans (recommend fresh)
1 red onion, thinly sliced
2 avocados, thinly sliced
1 bunch cilantro, torn
To Serve
Directions
Place a large iron skillet on high heat then add the Castaneda Beef ground beef. Season lightly with salt then sear until well browned, remove the beef from the skillet and set aside.
Into the same skillet add the bacon and cook on medium heat. Allow the fat to render and bacon to become crisp. Then remove the bacon from the skillet and set aside.
Place the skillet back on medium heat and pour in one tablespoon of bacon fat. Next add the onions, carrots, jalapenos, and garlic, saute for 10 minutes until tender.
Transfer the ground beef back to the skillet and add the spices; ground cumin, chili powder, oregano, cinnamon powder, and salt.
Stir together then add the tomato paste and cook for 3 minutes.
Pour in the crushed tomato, beef broth, pinto beans, and cooked bacon. Bring the chili to a simmer then cover with a lid and cook for 1 hour.
Serve the Castaneda Beef Chili with rice, garnished with cilantro, red onion and avocado.
